Both are trainers at <\/span><a href=\"http:\/\/www.barproject.it\/en\/\"><span style=\"font-weight: 400\">Barproject<\/span><\/a><span style=\"font-weight: 400\">, a beverage events and consulting company in <\/span><span style=\"font-weight: 400\">Bari, the <\/span><span style=\"font-weight: 400\">seaport city located where, if Italy\u2019s boot were imagined cowboy-style, the spur would jut. A 39 year old from <\/span><span style=\"font-weight: 400\">Conversano, S<\/span><span style=\"font-weight: 400\">portelli<\/span><span style=\"font-weight: 400\"> also runs his own<\/span><span style=\"font-weight: 400\"> cocktail catering company, <\/span><a href=\"http:\/\/www.aperinfresco.it\"><span style=\"font-weight: 400\">Aperinfresco<\/span><\/a><span style=\"font-weight: 400\">, and<\/span><span style=\"font-weight: 400\"> 28-year-old Peconio moonlights as head bartender at<\/span> <a href=\"http:\/\/www.kabukiclub.it\"><span style=\"font-weight: 400\">Kabuki<\/span><\/a><span style=\"font-weight: 400\">, a club, bar, and<\/span><span style=\"font-weight: 400\"> restaurant in his hometown of Bari.<\/span><\/p>\n<p><span style=\"font-weight: 400\">Sportelli and Peconio\u2019s signature drink, called the Terrone, combined two coffees from Italian specialty roaster <\/span><a href=\"http:\/\/www.edoquarta.it\"><span style=\"font-weight: 400\">Edo Quarta<\/span><\/a><span style=\"font-weight: 400\">\u2014a<\/span><span style=\"font-weight: 400\"> natural Colombian Quindio Villa Roa <\/span><span style=\"font-weight: 400\">and a washed <\/span><span style=\"font-weight: 400\">Kenyan Karindundo Nyery\u2014with booze aplenty. An <\/span><span style=\"font-weight: 400\">ibrik<\/span><span style=\"font-weight: 400\"> warmed up the spirits before smoking them and incorporating angostura bitters, thyme, and <\/span><span style=\"font-weight: 400\">cascara.<\/span><\/p>\n<p><span style=\"font-weight: 400\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-131767\" src=\"http:\/\/sprudge.com\/file\/2018\/04\/Coffee-Mixologists-DanFellowsPaulRossACF-1170x780.jpg\" alt=\"amsterdam coffee festival netherlands coffee mixologists\" width=\"1170\" height=\"780\" \/><\/span><\/p>\n<p><span style=\"font-weight: 400\">For the second year of the tournament, returning judges included\u00a0<\/span><a href=\"https:\/\/www.instagram.com\/koppianne\/\"><span style=\"font-weight: 400\">Anne Lunell<\/span><\/a><span style=\"font-weight: 400\">, co-founder of Swedish roaster <\/span><a href=\"https:\/\/www.koppi.se\"><span style=\"font-weight: 400\">Koppi<\/span><\/a><span style=\"font-weight: 400\">, and <\/span><a href=\"https:\/\/www.instagram.com\/haniasfdaai\"><span style=\"font-weight: 400\">Hani Asfdaai<\/span><\/a><span style=\"font-weight: 400\">, <\/span><a href=\"http:\/\/www.entreemagazine.nl\/nieuws\/branchenieuws\/best-bartender-2016-hani-asfdaai-noah-rdam28631\"><span style=\"font-weight: 400\">a<\/span><span style=\"font-weight: 400\">cclaimed<\/span><\/a><span style=\"font-weight: 400\"> bartender and owner of <\/span><a href=\"http:\/\/www.noahrotterdam.nl\"><span style=\"font-weight: 400\">Noah<\/span><\/a><span style=\"font-weight: 400\"> in Rotterdam.<\/span> <span style=\"font-weight: 400\">New to adjudication this year was <\/span><a href=\"http:\/\/sprudge.com\/an-interview-with-james-wise-your-2017-london-coffee-masters-champion-118671.html\"><span style=\"font-weight: 400\">2017 London Coffee Masters champion<\/span><\/a> <a href=\"https:\/\/www.instagram.com\/john.and.smith\"><span style=\"font-weight: 400\">James Wise<\/span><\/a><span style=\"font-weight: 400\">, and serving as the affable and enthusiastic MC was <\/span><a href=\"https:\/\/twitter.com\/DavidJamesonUK\"><span style=\"font-weight: 400\">Dave Jameson<\/span><\/a><span style=\"font-weight: 400\">, a t<\/span><span style=\"font-weight: 400\">wice-crowned UK <\/span><a href=\"https:\/\/www.worldcoffeeingoodspirits.org\"><span style=\"font-weight: 400\">Coffee in Good Spirits<\/span><\/a><span style=\"font-weight: 400\"> champion and coffee program manager at <\/span><a href=\"https:\/\/www.bewleys.co.uk\"><span style=\"font-weight: 400\">Bewley\u2019s<\/span><\/a><span style=\"font-weight: 400\"> UK.<\/span><\/p>\n<p><span style=\"font-weight: 400\">\u201cI was really impressed with Vito and Andrea from their first performance,\u201d Jameson shared with Sprudge. \u201cThey didn\u2019t make a bad drink all weekend, and the drink they prepared in the final was just sublime! That then led to experience with coffee preparation and eventually how to mix them together.<\/span><\/p>\n<p><b>Why did you decide to enter the Coffee Mixologists competition?<\/b><\/p>\n<p><b>VS<\/b><b>: <\/b><span style=\"font-weight: 400\">It was a challenge\u2014to get out of our comfort zone and have us confront professionals beyond our own country.<\/span><\/p>\n<p><b>AP<\/b><b>:<\/b><span style=\"font-weight: 400\"> To set ourselves outside our home environment and see what it would be like to put that kind of pressure on ourselves.<\/span><\/p>\n<div id=\"attachment_131768\" style=\"width: 595px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" loading=\"lazy\" class=\"size-large wp-image-131768\" src=\"http:\/\/sprudge.com\/file\/2018\/04\/Coffee-Mixologists-CoffeeMixologists_sign_DaveJameson-585x780.jpg\" alt=\"amsterdam coffee festival netherlands coffee mixologists\" width=\"585\" height=\"780\" \/><\/p>\n<p class=\"wp-caption-text\">Photo courtesy of Dave Jameson.<\/p>\n<\/div>\n<p><b>Do you consider one of yourselves more of a barista and the other a bartender, or do you both feel equally comfortable with coffee and cocktails?<\/b><\/p>\n<p><b>VS:<\/b><span style=\"font-weight: 400\"> Thanks to all the work we have done in recent years, we are quite complementary in both disciplines.<\/span><\/p>\n<p><b>AP<\/b><b>:<\/b><span style=\"font-weight: 400\"> We are both bartenders though, above all, work well together as a close-knit team.<\/span><\/p>\n<p><b>In the first round, The Signature Drink, you prepared the Terrone, which include Bols Genever 1575 and Imea Gineprina d\u2019Olanda 1897. Did making this drink for a competition in Amsterdam influence the decision to use traditional Dutch alcohol?<\/b><\/p>\n<p><b>VS<\/b><b>:<\/b><span style=\"font-weight: 400\"> Absolutely. <\/span><span style=\"font-weight: 400\">We like to create drinks that are not just perfectly balanced, but that also have cultural content. <\/span><span style=\"font-weight: 400\">We were thinking about how to create a union between our land and the Amsterdam Coffee Festival.<\/span><\/p>\n<p><b>AP<\/b><b>:<\/b> <span style=\"font-weight: 400\">Terrone is the result of the Barproject crew\u2019s teamwork. However, Dutch products were chosen to honor Dutch culture.<\/span><\/p>\n<div id=\"attachment_131765\" style=\"width: 595px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" loading=\"lazy\" class=\"size-large wp-image-131765\" src=\"http:\/\/sprudge.com\/file\/2018\/04\/Coffee-Mixologists-PaulRossDanFellowsDaveJameson-585x780.jpg\" alt=\"amsterdam coffee festival netherlands coffee mixologists\" width=\"585\" height=\"780\" \/><\/p>\n<p class=\"wp-caption-text\">Photo courtesy of Dave Jameson.<\/p>\n<\/div>\n<p><b>How was working with the secret ingredients in The Mystery round?<\/b><\/p>\n<p><b>VS:<\/b><span style=\"font-weight: 400\"> Stimulating and fun.<\/span><\/p>\n<p><b>AP<\/b><b>:<\/b><span style=\"font-weight: 400\"> And to succeed in these rounds, we focused on really evaluating the characteristics of the single-origin coffee that we had to use.<\/span><\/p>\n<p><b>What was the hardest part about the competition?<\/b><\/p>\n<p><b>VS<\/b><b>:<\/b> <span style=\"font-weight: 400\">During the semi-final [in the Redefining the Classic round], the competition required us to reinterpret a Black Russian. <\/span><span style=\"font-weight: 400\">The greatest effort was reinventing it without being banal. W<\/span><span style=\"font-weight: 400\">e revised it tiki-style, keeping the characteristics of the drink when in contact with the lips and letting it evolve during the drinking process so it could still carry exotic notes.<\/span><\/p>\n<p><b>While Italy leads in the world in terms of coffee technology, your country&#8217;s specialty coffee roasting and cafe scene is still emerging. Do you see yourselves as ambassadors for contemporary Italian coffee or cocktails?<\/b><\/p>\n<p><b>VS<\/b><b>:<\/b><span style=\"font-weight: 400\"> We believe that a barista in Italy must necessarily know all the materials that he deals with during his work, and we work every day applying this philosophy\u2014above all, during our shifts behind the bar.<\/span><\/p>\n<p><span style=\"font-weight: 400\">We have been working with specialty products for six years now, incorporating them in our consumer education and catering, all while respecting the concept of made-in-Italy as well as new world trends.<\/span><\/p>\n<div id=\"attachment_131773\" style=\"width: 595px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" loading=\"lazy\" class=\"size-large wp-image-131773\" src=\"http:\/\/sprudge.com\/file\/2018\/04\/Coffee-Mixologists-AndreaPeconioVitoSportelli_win1_DaveJameson-585x780.jpg\" alt=\"amsterdam coffee festival netherlands coffee mixologists\" width=\"585\" height=\"780\" \/><\/p>\n<p class=\"wp-caption-text\">This event includes a \u20ac1000 cash prize.
