The Capital Hill cafe that bills itself as a \u201cmodern, progressive coffee shop\u201d is positioned to offer Seattleites a gastronomic coffee experience. Take it\u2019s signature coffee cocktail, called The Sun Ship, for example. The drink, served in a martini glass, is a mixture of espresso, in-house smoked grapefruit rosemary syrup, coconut water, sparkling water, and lime.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cAny professional in any sort of field, art or otherwise, comes to a place where you feel like you\u2019ve hit a wall,\u201d Andrews says. \u201cI felt somewhat limited until now.\u201d<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">At Ghost Note, he\u2019s the type of owner who pulls a towel from behind the bar 30 seconds after walking in to wipe up a smudged bit of creamer on the counter. His eyes flash around the cafe as he speaks, making peace signs at customers breezing through the entrance. <\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">The prevalence of cocktails on cafe menus is <a href=\"http:\/\/sprudge.com\/new-contributor-alex-negranza-on-the-thoroughly-modern-coffee-cocktail-32255.html\" target=\"\u201c_blank\u201d\"><span class=\"s2\">on the rise<\/span><\/a>. Ghost Note\u2019s includes a concoction of African espresso, tonic water, juniper sage concentrate, and cucumber. And still another, dubbed the Firefly Tonic, that features tonic water, Burundi espresso, Lemon Lavender shrub, lemon bitters, and of course, in-house rose lavender syrup.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-133863\" src=\"http:\/\/sprudge.com\/file\/2018\/06\/ghostnote_seattle_sunship_john_clem_02-1168x780.jpg\" alt=\"ghost note coffee seattle washington\" width=\"1168\" height=\"780\" \/><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Andrews made his entrance into the food world while working at Whole Foods in Nashville, where he was living attempting to make a go at drumming in the city\u2019s music scene. Ghost Note\u2019s name refers to a musical note that at once carries rhythmic value and no discernible pitch. For a drummer, a ghost note is what lends personality and feel to an average piece of music.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cBut after I got my first barista job, it was game over,\u201d Andrews says with a grin.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Instead of a drum kit, his instrument of choice at Ghost Note is a <a href=\"https:\/\/www.lamarzoccousa.com\/portfolio\/linea\/\">La Marzocco Linea<\/a>. Andrews and his friends jokingly refer to the shop\u2019s signature method of pulling shots as a Blast Brew.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cWe put a flow restrictor on the pump,\u201d Andrews says, \u201cturning the pressure down to five-and-a-half bars, and the temperature up to 203, with a 14-and-a-half brew ratio.\u201d<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Other members of the Seattle coffee community, like Alex Johnstone and David Rothstein of\u00a0<a href=\"https:\/\/sprudge.com\/seattle-beep-beep-its-convoy-coffee-in-pioneer-square-83537.html\" target=\"\u201c_blank\u201d\"><span class=\"s2\">Convoy Coffee<\/span><\/a>, appreciate the way Ghost Note brings a culinary passion to coffee.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cWe\u2019re big fans of Christos,\u201d Johnstone says. Of the Blast Brew, he adds: \u201cIt\u2019s like pulling an espresso-esque shot at the volume of twelve ounces.\u201d<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-133864\" src=\"http:\/\/sprudge.com\/file\/2018\/06\/ghostnote_seattle_owner_john_clem_04-1092x780.jpg\" alt=\"ghost note coffee seattle washington\" width=\"1092\" height=\"780\" \/><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Ghost Note regularly stocks Seattle\u2019s\u00a0<a href=\"http:\/\/broadcastcoffee.com\/\"><span class=\"s2\">Broadcast Coffee<\/span><\/a>, and sources food items from other local outfits like\u00a0<a href=\"http:\/\/www.salmonberrygoods.com\/\"><span class=\"s2\">Salmonberry Goods<\/span><\/a> and <a href=\"http:\/\/www.columbiacitybakery.com\/\"><span class=\"s2\">Columbia City Bakery<\/span><\/a>, where Andrews expanded the coffee program. The shop\u2019s mugs come from nearby\u00a0<a href=\"http:\/\/yutangceramics.com\/\"><span class=\"s2\">Yu Tang Ceramics<\/span><\/a>, and it adds a bit of imported flare from a guest roaster program, which has featured more far-afield roasters like Colorado\u2019s <a href=\"https:\/\/sweetbloomcoffee.com\/collections\/coffee\"><span class=\"s3\">Sweet Bloom Coffee Roasters<\/span><\/a>.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">It should be noted that Andrews\u2019 price point is higher than that of other area shops. He and his partner, a software engineer named Lee Hampton from New York, surveyed the pricing of other cafes in Capital Hill and set theirs in the high end. Then they added 10 percent.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">That\u2019s because Ghost Note doesn\u2019t accept tips. Andrews uses the added income of higher-priced menu items to pay baristas competitive wages as well as for holidays and two weeks of paid vacation.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cGhost Note is different because they\u2019re quietly doing things better than they need to be done,\u201d Convoy\u2019s Rothstein says.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\"><img decoding=\"async\" loading=\"lazy\" class=\"aligncenter size-large wp-image-133866\" src=\"http:\/\/sprudge.com\/file\/2018\/06\/ghostnote_seattle_artsymugs_john_clem_03-1170x780.jpg\" alt=\"ghost note coffee seattle washington\" width=\"1170\" height=\"780\" \/><\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Andrews won America\u2019s Best Espresso contest in 2013 while working for\u00a0<a href=\"https:\/\/www.tonyscoffee.com\/\"><span class=\"s2\">Tony\u2019s Coffee<\/span><\/a>\u00a0out of Bellingham. Before that, he was directing coffee at\u00a0<a href=\"http:\/\/neptunecoffee.com\/\"><span class=\"s2\">Neptune Coffee<\/span><\/a>, then\u00a0<a href=\"https:\/\/www.tougocoffee.com\/\"><span class=\"s2\">Tougo Coffee<\/span><\/a>\u00a0for two years. Last year, his Sun Ship garnered a semi-finals nod at the\u00a0<a href=\"http:\/\/www.coffeemasters.org\/new-york-2017\/\"><span class=\"s2\">Coffee Masters NYC<\/span><\/a>\u00a0competition.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cThere were times when I had like three jobs,\u201d Andrews says of his dedication to his work. \u201cAnd I\u2019m technically still a trainer and consultant at the\u00a0<a href=\"http:\/\/www.seattlebaristaacademy.org\/\"><span class=\"s2\">Seattle Barista Academy<\/span><\/a>.\u201d When Ghost Note opened, Andrews ran the cafe by himself.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">\u201cI don\u2019t recommend it,\u201d Andrews says with a laugh.<\/span><\/p>\n<p class=\"p1\"><span class=\"s1\">Andrews says he has no idea where Ghost Note will be in the future. But he hopes to open another shop\u2014he knows that much. And he also knows he doesn\u2019t want to hit a ceiling. Today, Ghost Note is good.
